One of our favorite easy dinners is a kale frittata. I grow two types of kale in the garden, and it makes for an easy meal with leftovers for lunch. We have been adding small red and orange peppers. I do not grow peppers, but we pick them up at Fresh Thyme or Aldi's.
The Russian Red kale has overwintered before here in zone 5. I had one plan make it three years.
When I transitioned my walkway containers for fall I filled them with kale and chard seeds, creating a colorful fall display that edible too!
When I found out hte kids were paying $7 a bunch for kale I was aghast and increased my planting to supply their smoothies :)
